Blanched Slivered Almonds
The almond is one of the most nutritious nuts, with many vitamins, minerals and healthy phytochemicals. They’re rich in oleic acids and palmitoleic acids that lower bad cholesterol and promote good cholesterol. Those on a gluten-free diet can use almonds and almond flour as a substitute for grains.
They are now the seventh largest export item in the U.S., and California grows 80% of the world’s almonds, over 400,000 acres of land. More than 25 types make up california’s largest nut crop.
Replacing grain or potato-based with almond products may help lower blood sugar levels. Even when you eat meals including grains, having almonds as well can lower the glycemic index. Hence adding almonds to the diet can help moderate the risk of diabetes & cardiovascular disease.
BAKED APPLES WITH HONEY AND SLIVERED ALMONDS
Ingredients
- 4 large, sweet tart apples (e.g. honeycrisp, gala)
- 1 oz. slivered almonds
- 2 1/2 tbsp. butter
- 1/2 cup honey
Heat oven to 375°F.
Wash apples. Cut each in half and core with a melon baller. Place halved apples in ungreased 9x9x2-inch baking dish. Place 1/2 teaspoon of butter in the center of each half. Top each half with slivered almonds. Drizzle with honey.
Bake at 375°F for 30 minutes or until flesh of apple is tender when pierced with a fork. Transfer to serving plate and pour honey from baking dish over.
Serve warm or cold for a delicious dessert or snack.
